This Apple, Sausage & Sweet Potato bake is delicious sweet and savory dish that is sure to please your family! Made in the slow cooker, it is the perfect quick and easy meal for a busy weeknight.

Apple, Sausage & Sweet Potato Bake

This is a recipe that I used to regularly bake in the oven for my family. While we are working on building our house I have not had access to a decent oven.

One day I was thinking about this dish and how much my family enjoys it, and bemoaning the fact that I could not make it for them. It was always a crowd pleaser, and so easy to pull together for dinner.

Then inspiration struck and I decided to try making it in my slow cooker. The result was just as delicious as the oven version! My family gobbled it right up. The next time I made it I had to double the recipe to make sure everybody got enough of it.

Smoked Sausage and Sweet Potatoes

I think the two ingredients that shine through in the dish are the smoked sausage and sweet potatoes. I always prefer to pair sweet potatoes with savory ingredients. I believe it brings out the best in sweet potatoes.

The smoked sausage is a simple ingredient that adds big flavor to the dish. The apples add a nice bit of tart, and the maple syrup adds just a bit of sweetness, without making the dish too sweet.

Ingredients:

3-4 medium size sweet potatoes, cubed

3 Granny Smith apples, cubed

1 red onion, diced

1 lb smoked sausage, sliced

1 tbsp maple syrup

2 tsp garlic powder

2 tsp thyme

1 tsp rosemary

1 tsp salt

1/2 tsp pepper

1/4 cup water

Method:

Combine all ingredients in slow cooker. Stir. Cook on HIGH 3-4 hours or LOW for 6-7 hours.

Ingredients

  • 3-4 medium sweet potatoes cubed
  • 3 granny smith apples cubed
  • 1 red onion chopped
  • 1 lb smoked sausage sliced
  • 3 tbsp avocado oil
  • 1 tbsp maple syrup
  • 2 tsp garlic powder
  • 2 tsp dried thyme
  • 1 tsp dried rosemary
  • 1 tsp salt
  • 1/2 tsp black pepper
  • ¼ cup water

Instructions

  • Combine all ingredients in the slow cooker and stir.
  • Cook on HIGH for 2-3 hours or LOW for 6-7 hours.

      Honestly, I am not a big fan of sausage either. But I use beef sausage for this recipe and it is just delicious!
