- 5 lbs Yukon Gold or Russet potatoes peeled (optional) and quartered
- 8 oz butter room temperature
- 1 cup heavy cream room temperature
- 3 tsp salt divided
- 1 tsp pepper
Place 1 ½ cups water in Instant Pot
Place potatoes in Instant Pot and add 1 tsp salt
Cook on high pressure for 10 minutes
When cooking cycle is completed, perform quick release
Drain remaining water
Using a hand masher, carefully mash potatoes
Once the potatoes are mashed, add butter and stir carefully to incorporate
Put heavy cream, 2 tsp salt, and pepper into the pot. Stir, being careful to not overstir
Serve
