This hearty and delicious slow cooker minestrone soup is easy to pull together and makes for the perfect filling dinner on a chilly night.

Ingredients

  • 4 cups chicken stock
  • 2 cups tomato juice
  • 1 cup water
  • 6 oz tomato paste
  • 4 medium Yukon Gold potatoes cubed
  • 10 oz frozen mixed vegetables
  • 28 oz crushed tomatoes
  • 15 oz kidney beans drained
  • 15 oz cannellini beans drained
  • 1 yellow onion diced
  • 1 tsp garlic powder
  • 1 tsp parsley dried
  • 1 tsp oregano dried
  • 1 tsp thyme dried
  • 1 tsp basil dried
  • 2 tsp salt
  • 1 tsp pepper
  • ½ cup orzo or other small pasta

Instructions

  • Place all ingredients in the slow cooker.
  • Stir to combine.
  • Cook on HIGH 5-6 hours or LOW 8-9 hours.

Notes

Can be vegetarian and vegan by substituting chicken broth with vegetable broth.
