Easy Red Beans and Rice Recipe

In my opinion, one of the best ways to make an easy meal is to use a slow cooker! There is something so satisfying about putting all of the ingredients into the slow cooker, walking away, and coming back to a delicious and hearty dinner.

This slow cooker red beans and rice recipe is perfect for a busy day. It also makes a great meal for a crowd as the beans and rice are inexpensive ingredients that stretch a long way.

A disclaimer though: this recipe is not an authentic Louisiana style red beans and rice recipe. A typical Louisiana red beans and rice recipe has a soupy red beans mixture that is served over rice.

Since my recipe is made in the slow cooker, the rice cooks along with the rest of the ingredients. The result is a red beans and rice that is not as soupy. But it still has many of the great flavors that you find in authentic red beans and rice.

I find that I prefer the texture of my slow cooker red beans and rice more. And my kids prefer them this way too!

Slow Cooker Red Beans and Rice with Canned Beans

The easiest way to make slow cooker red beans and rice recipe is with canned beans. You could also use dry beans that have already been cooked. But you should not use straight up dry beans in this recipe.

What Goes Well with Red Beans and Rice?

Are you wondering what to serve alongside your slow cooker red beans and rice? Corn is a great side dish to serve with red beans and rice.

There are many options for how to serve the corn. You could serve corn on the cob, or my creamed corn would also go well with it. Cornbread is also a great side dish to have with red beans and rice.

Other options are coleslaw and steamed or roasted vegetables.

Slow Cooker Red Beans and Rice Recipe

Ingredients:

2- 15 oz cans kidney beans, drained and rinsed

2 cups dry white rice

2- 15 oz cans diced tomatoes

1- 14 oz andouille sausage, sliced

1 yellow onion, diced

1 green bell pepper, diced

2 tbsp pickled jalapenos, diced

2 tbsp butter

2 tsp salt

1 tsp cumin

1 tsp garlic powder

1 tsp thyme

1/4 tsp cayenne pepper

1 cup water

hot sauce

Method:

Place all ingredients in slow cooker. Stir well to combine.

Cook on high for 3-4 hours or on low for 6-7 hours.

Once cooked, stir again.

Sprinkle hot sauce on top before serving.

  • Once cooking is complete, stir again.
  • Sprinkle hot sauce on top before serving.
